Coffee,
served hot or cold, is the world’s most popular beverage. With over 400 billion
cups consumed every year, coffee is the second most commonly traded commodity
in the world, trailing only petroleum. To supply the demand for coffee,
millions of laborers employed in the cultivation and harvesting of coffee plants the world over, more than those needed in the plantation of soy, sugar
cane, wheat or cattle, because coffee is not subject to automation.
Coffee is
consumed for its taste and the caffeine effect an its drinkers. There are more
than 30 species, two of which have became commercially important: coffee arabica and coffee canephora (robusta).
Arabica, first cultivated in the
better than robusta, the cultivation
of which can take place in an environment where arabica will not thrive. The caffeine contained in arabica is about a half of that in robusta. To lower the ingredient cost
and to provide flavor, coffee blenders usually mix arabica and robusta.
